I did the 2 day - 1 night trip and I really loved it! Walking/cycling in between rice fields, really good food, lovely people, nice sleeping place and not a lot of tourists! Hope you'll enjoy it as much as I did

My wife and I chose the 2 day tour. The bus ride from Hanoi was fine as the shuttle bus was spacious. We had a quick rest break halfway. The tour group was about 15 people and felt like the perfect size. The homestay was nice and relaxing. My wife and I chose to sleep in a bungalow rather than in the dormitory. We rode push bikes around the village and rice paddies. We also walked up 1200 steps to get to a cave at the top of a mountain. We saw some locals perform a dance and they even envited people to dance. The food was very nice. We also went to the markets which sold souvenirs and traditional cloth. Market items were at a great price and not busy. So Mai Chau was great. Very beautiful place to visit and definitely a highlight of my Vietnam holiday. Overall a great experience.
